  • 1/2 head iceberg, washed and torn
  • 1/2 head romaine, washed and torn
  • 2 or 3 tomatoes, quartered
  • 1 medium onion, sliced thin
  • 1 bell pepper, sliced thin
  • 1 cucumber, sliced thin
  • 1 c. calamata olives, sliced thin
  • 3 Tbsp. capers
  • 4 oz. Feta cheese

Directions

    Make dressing of 1/2 cup olive oil, 1/4 cup salad vinegar (part balsamic), salt and pepper. Toss lettuces with next 6 ingredients. Pour dressing over salad; toss again. Top with Feta cheese. (I usually pit the olives.) Makes 6 servings.
