Ingredients

  • 3 egg whites
  • 1/2 c. sugar
  • 3/4 c. chopped nuts
  • 1/2 c. sugar
  • 20 Ritz crackers
  • 1 tsp. vanilla
  • small carton whipping cream
  • 3 Tbsp. pineapple preserves (crushed, drained and sweetened pineapple may be substituted)

    Beat

    egg whites until stiff;

    add 1/2 cup sugar gradually while continuing to beat.

    Roll or blend crackers to very fine crumbs

    and

    mix in along with 1/2 cup sugar and fold in nuts. Fold

    this into egg mixture and add vanilla.

    Pour into well-greased

    plate

    (9-inch) and bake 30 minutes in 325° oven.

    When done, set for 4 hours, then top with whipped cream with pineapple mixed in.
