- 3 egg whites
- 1/2 c. sugar
- 3/4 c. chopped nuts
- 1/2 c. sugar
- 20 Ritz crackers
- 1 tsp. vanilla
- small carton whipping cream
- 3 Tbsp. pineapple preserves (crushed, drained and sweetened pineapple may be substituted)

2egg whites until stiff;

3add 1/2 cup sugar gradually while continuing to beat.

4Roll or blend crackers to very fine crumbs

6mix in along with 1/2 cup sugar and fold in nuts. Fold

7this into egg mixture and add vanilla.

8Pour into well-greased

11(9-inch) and bake 30 minutes in 325° oven.

12When done, set for 4 hours, then top with whipped cream with pineapple mixed in.
