Ingredients

  • 1 1/2 tbsp active dry yeast
  • 1 cup warm water
  • 1/4 cup sugar
  • 1/4 cup whole milk
  • 1/4 cup buttermilk or plain yogurt
  • 2 tsp salt
  • 4 cups flour
  • melted butter or ghee

    1. In the bowl of a stand mixer, add warm water and mix in the yeast. Let stand for 10 minutes until it is frothy.

    2. Add sugar, salt, milk, buttermilk or yogurt, and 2 cups flour.

    3. Mix using the whisk attachment until well combined.

    4. Add the remaining flour and mix using the dough hook attachment for 6 - 8 minutes.

    5. Pull the dough out of the bowl, add a little olive oil to the bowl, and put the dough back in, rolling it through the oil and oiling the bowl with it.

    6. Cover the bowl with a damp cloth and place somewhere warm. Let it rise until doubled in size, about 1 hour.

    7. Punch the dough down. Cover and let rise until an hour from when you need it.

    8. Divide dough into 14 pieces, roll them into balls, place on a tray or cookie sheet, cover and let rest for 30 minutes.

    9. Roll each dough ball into a thin circle.

    10. The naan can be cooked in the following ways: grill it, cook on a dry pan on top of the stove, or bake in the oven on a baking stone or cast iron pan.
