  • 1 lb chorizo sausage, casings removed
  • 1 medium onion, chopped
  • 1 (15 ounce) can pinto beans, rinsed and drained
  • 8 eggs
  • 1 cup heavy cream
  • 1 cup sour cream
  • 3 cups tortilla chips
  • 2 cups cheddar cheese, shredded
  • 2 tablespoons cilantro leaves

    Preheat oven to 375 F.

    Cook chorizo until browned in a large nonstick skillet over medium-high heat.

    Transfer chorizo to a 3-quart baking dish.

    Saute onion in the pan drippings until golden.

    Stir beans into onions and transfer to baking dish.

    Beat the eggs, heavy cream and sour cream together.

    Pour into dish.

    Press chips into the mixture so they stand up.

    Sprinkle with cheddar and bake until the eggs are set (45 minutes).

    Sprinkle with cilantro and salsa (optional).
