  • 1 lb. ground beef
  • 1 Tbsp. chili powder
  • 1 (12 oz.) jar chunky salsa
  • 1 c. frozen corn, thawed and drained
  • 1/2 c. sour cream
  • 4 c. tortilla chips, divided
  • 1 (8 oz.) pkg. shredded Cheddar or Colby and Monterey Jack cheese, divided

Directions

    Brown meat with chili powder and drain.

    Stir in salsa, corn and sour cream.

    Spoon 1 cup mixture into 1 1/2-quart casserole. Top with 1/2 each of the chips, remaining meat mixture and cheese. Repeat layers.

    Bake at 350° for 20 minutes or until thoroughly heated.

    Top with shredded lettuce and chopped tomato, if desired. Makes 6 servings.
