  • 2 tablespoons fresh lime juice
  • 2 tablespoons nam pla
  • 1 teaspoon minced garlic
  • 1/4 teaspoon minced fresh chile, cayenne, or hot red pepper flakes, or to taste
  • 2 teaspoons sugar
  • 1 tablespoon minced dried shrimp, optional
  • 1 tablespoon finely shredded carrot, optional

Directions

    Combine all the ingredients and stir; make sure the sugar dissolves.

    Taste and adjust the seasonings as necessary (I often add more nam pla).

    Let rest for a few minutes before serving or cover and refrigerate for about a day (return to room temperature before using).
