- 1 tablespoon all-purpose flour
- 4 eggs, beaten
- 1 cup light corn syrup
- 1 tablespoon grated lemon rind
- 3 tablespoons lemon juice
- 1 tablespoon plus 1 teaspoon butter or margarine, melted
- 1 unbaked (9-inch) pastry shell
- Whipped cream (optional)
- Grated lemon rind (optional)
Directions

1Combine sugar and flour in a medium mixing bowl; add eggs, syrup, 1 tablespoon lemon rind, juice, and butter, mixing well.

2Pour filling into pastry shell. Bake at 375° for 10 minutes. Reduce temperature to 350°; bake 45 minutes. Cool to room temperature. Garnish with whipped cream and sprinkle with lemon rind before serving, if desired.
