- 2 tablespoons butter
- 1/2 cup low-sodium chicken stock
- 6 sprigs fresh thyme
- 1 (12-ounce) package frozen corn
- 1/4 cup sour cream
- Salt and freshly ground black pepper
- Cayenne pepper, for garnish
Directions

1In a saucepan on medium-high heat, add the butter, chicken stock and thyme.

2Simmer until the thyme wilts slightly, about 8 minutes.

3Add the corn and stir to break up any chunks.

4Simmer for about 10 minutes.

5Remove from the heat, remove the sprigs of thyme, add the sour cream and season with salt and pepper.

6Stir to blend, and then serve with a dash of cayenne pepper.
