Navy Bean Soup

Ingredients
- 2 c. dried navy beans
- water (to cover)
- 1 medium size piece ham hock
- 1 bay leaf
- 2 medium onions, chopped
- 1 large potato, peeled and cubed
- 3 stalks celery
- salt and pepper to taste
- garlic powder to taste
Directions

1Wash and sort beans.

2Place in a large kettle.

3Cover with water.

4Soak one hour.

5Drain.
-
6Cover beans with water again. Add ham hock and bay leaf.

7Bring to a boil.

8Cover, reduce heat and simmer 1 1/2 hours or until beans are tender.

9Add remaining ingredients.
-
10Cover and simmer 20 minutes longer or until vegetables are tender.

11Stir occasionally.

12Remove bay leaf before serving.

13Yield:

143 quarts.
