Navy Bean Soup

- 2 Tbsp. vegetable oil
- 1 1/2 c. (6 oz.) low salt ham, cut into 1/2-inch cubes
- 1 Tbsp. chopped jalapeno pepper
- 1 c. chopped leeks
- 1 c. uncooked navy beans, soaked overnight and drained
Directions

1Heat oil in 3-quart saucepan over medium heat.

2Add leeks and saute 3 to 5 minutes or until tender.

3Stir in ham, beans and pepper.

4Add enough water to just cover beans.

5Bring to a boil and reduce heat to low.

6Cover and simmer 1 to 1 1/2 hours until beans are tender. Makes 4 servings.
