Navy Bean Soup

Ingredients

  • 2 c. dried navy beans
  • 1/2 c. diced salt pork or 1 beef bouillon cube
  • 2 qt. water
  • 1 large Progresso crushed tomatoes
  • 2 large potatoes, peeled and diced
  • 2 small onions, diced
  • 2 carrots, diced
  • 1 Tbsp. salt
  • 1/2 tsp. salt
  • celery to taste

Directions

    Sort and wash beans.

    Cover with water and soak overnight. Drain beans.

    Add pork or melted bouillon cube and 2 quarts water. Boil for 2 minutes.

    Cover; lower heat and simmer for 1 hour until beans are barely tender.

    Add remaining ingredients until veggies are tender.

    Serves 6.
