Navy Bean Soup

Ingredients

  • 2 c. navy beans, soaked overnight
  • 1 meaty ham bone
  • 3 qt. water
  • 1/2 c. mashed potatoes
  • 3 onions
  • 1 bunch celery, chopped (including leaves)
  • 2 cloves garlic, chopped
  • 1/4 c. fresh parsley, chopped
  • 2 Tbsp. tomato paste
  • salt and pepper to taste
  • sour cream for serving

Directions

    Place soaked beans, water and ham bone in a large kettle. Simmer, covered, for 2 hours.

    Stir in potatoes when half cooked. Add remaining ingredients except for sour cream.

    Simmer for 1 hour.

    Remove ham bone; chop meat and return to kettle.

    Season to taste.

    Serve as is or puree in food processor.
