  • 3/4 c. mashed potatoes
  • 1/2 tsp. salt
  • 2 (1 lb.) boxes confectioners sugar
  • 1 stick oleo
  • 1 (8 oz.) pkg. shredded coconut
  • 2 tsp. vanilla

Directions

    Prepare and cook potatoes to make 3/4 cup.

    Drain.

    Add salt and mash.

    Melt oleo; add potatoes, coconut and sugar and mix well. Turn into a buttered jelly roll pan.

    Spread evenly.

    Refrigerate and allow to harden.

    Cut into squares and dip in coating.
