- 1 c. yellow corn meal
- 1 c. flour
- 1 plus tsp. baking powder
- 1 tsp. salt
- 1 c. milk or buttermilk
- 2 eggs, beaten
- 1/2 stick oleo
- 3 Tbsp. oil
Directions

1Heat oven to 425°.

2Heat oil in skillet or 8 or 9-inch pan. Also makes Texas-sized muffins.

3Combine dry ingredients.

4Melt oleo, add milk and eggs.

5Add to dry mixture.

6Mix until blended. Pour into baking pan.

7Bake 20 to 25 minutes or until brown on top.

8I start checking at 15 minutes.

9Is done when brown on top.
