- 1 Tbsp. cornstarch
- 2 Tbsp. cold water
- 1/3 c. boiling water
- 3 egg whites
- 6 Tbsp. sugar
- 1 tsp. vanilla
- dash of salt
Directions

1Blend cornstarch and cold water in a saucepan.

2Add boiling water and cook, stirring until clear and thickened.

3Let stand until completely cold.

4With electric mixer at high speed, beat egg whites until foamy.

5Gradually add sugar and beat until stiff, but not dry.

6Turn mixer to low speed, add salt, and vanilla. Gradually beat in cold cornstarch mixture.

7Turn mixer to high again and beat well.

8Spread meringue over cooled pie filling. Bake at 350° for about 10 minutes until lightly browned.
