  • 1 lb. red potatoes, cut into 1 inch pieces
  • 2 Tbsp. margarine or butter
  • 1/2 (10 oz.) pkg. frozen broccoli cuts or florets, thawed
  • 1/2 tsp. cracked black pepper
  • 1/4 tsp. salt
  • 1/4 c. shredded Cheddar cheese

Directions

    In bowl cook unpeeled potatoes, margarine and 2 tablespoons water, covered, on High for 10 to 12 minutes, until tender.

    Stir twice during cooking.

    With masher, mash lightly.

    Stir in broccoli, pepper and salt.

    Top with cheese.

    Melt 1 1/2 to 2 minutes.
