New Orleans Rice Pudding

Ingredients

  • 1 c. uncooked rice
  • 3 c. milk
  • 1 c. whipping cream
  • 1 stick butter
  • 3/4 c. sugar
  • 1 tsp. vanilla extract
  • 1/2 c. raisins
  • 3 whole eggs, beaten
  • 6 egg yolks, beaten
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg

    Bring rice, milk and cream to a boil; cover and

    cook until most of milk is absorbed and rice is tender.

    Add all other ingredients, except egg yolks and whole eggs.

    Stir some of the rice mixture into eggs and pour egg mixture into rice mixture and stir.

    Pour into 2-quart buttered casserole and bake at 350° for 30 minutes.

    Serves 8 to 10.
