Ingredients
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 2 sticks celery, chopped
- 1 lb. string (green) beans (fresh or frozen)
- 1 (16 oz.) can chopped tomatoes
- 4 Tbsp. vegetable stock, tomato juice or water
- 1 bay leaf
- 1/2 c. fresh parsley
- basil, oregano, salt and pepper to taste
Directions

1Saute onion and celery in large frying pan with the oil until lightly browned.

2Boil or steam beans until tender (about 10 minutes).

3Drain and set aside.

4Add tomatoes, stock, juice or water, bay leaf, parsley and other spices to saute.

5Stir well and simmer for 20 minutes, uncovered.

6Continue to season to taste. Add the cooked beans to the sauce and stir.

7Bring to a simmer and cook for 2 to 3 more minutes.

8Serve immediately.

9Serve with pasta, rice or potatoes.
