- 2 Tbsp. butter or margarine
- 3 medium onions, thinly sliced
- 1 small eggplant
- 1/4 c. soy sauce (approximately)
- 1/4 c. water (approximately)
- 2 to 3 Tbsp. light brown sugar
Directions

1Peel eggplant and cut into 1/2-inch to 3/4-inch cubes. Meanwhile, in a skillet, fry onions in butter.

2Add eggplant, soy sauce, water and brown sugar to onions.

3Cover and simmer for 20 minutes.
