  • 3 tablespoons sunflower oil
  • 2 inches ginger, grated
  • 2 teaspoons coriander seeds
  • 2 teaspoons garam masala, or
  • 2 teaspoons chat masala
  • 12 teaspoon cayenne pepper
  • 1 tablespoon lemon juice (optional)

  • 12 kg white flour (400 ground)
  • 1 teaspoon salt
  • 12 cup sunflower oil
  • water
  • sunflower oil (for frying)
