- 2 eggs
- 1 c. unsifted flour
- 1 c. milk
- 1/2 tsp. salt
- 1 Tbsp. melted butter
Directions

1Preheat oven to 450°.

2In mixing bowl, beat eggs slightly. Add remaining ingredients; beat just until smooth.

3Do not overbeat.

4Fill generously greased muffin cups half full.

5Bake at 450° for 15 minutes, then reduce heat to 325° and bake 25 to 30 minutes, or until golden brown.

6Prick crust with tip of knife during last 5 minutes of baking to allow steam to escape.

7Serve hot.

8Makes 6 to 8 popovers.

9Use popover cups for larger, higher rising muffins.
