- 1 c. apple juice
- 1/2 c. maple syrup
- 1 Golden Delicious apple
- 1/2 tsp. salt
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 c. pastry flour
- canola oil or spray for pan
- 1/2 c. roasted chopped almonds (optional)
Directions

1Mix dry ingredients; set aside.

2Mix liquid ingredients. Combine both.

3Wash apple but do not peel.

4Cut into small pieces and remove seeds.

5Dice well.

6Mix into batter and add almonds, if desired.

7Use a nonstick muffin pan or a lightly sprayed pan. Fill muffin tins 3/4 full.

8Bake for 30 minutes at 375°.
