No-Pot Tomatoes

  • 1 tomato
  • 1/2 onion
  • 1/2 tsp. olive oil or butter
  • pinch of basil, tarragon and oregano
  • salt and butter

Directions

    Wash, core and cut each tomato into 8 chunks.

    Peel the onions; chop them roughly and add to tomatoes.

    Add butter or oil, salt, pepper and herbs.

    Wrap the mixture in foil and seal the edges well.

    (You may even want to wrap it in 2 layers.)

    Tuck the package down in the coals or place it on the grill.

    Depending on the heat of the fire, allow 15 to 30 minutes, enough time for the onions to get tender.

    Serve these with grilled hamburgers, steak or chicken for an easy no-pot supper.
