- 2 Tbsp. vegetable oil
- 1 c. frozen chopped onion, unthawed
- 1/2 c. chopped green pepper
- 1 lb. lean ground beef
- 1 (3/8 oz.) pkg. chili seasoning mix
- 1/4 tsp. black pepper
- 1 (1 lb. 3 oz.) can kidney beans, drained and rinsed
- 1 (9 oz.) pkg. frozen cut green beans, unthawed
- 1/4 tsp. red pepper flakes
- 1 1/2 c. quick cooking rice
Directions

1Heat oil in large saucepan over moderate heat for 1 minute. Add onion and green pepper; saute, stirring often for 2 minutes or until slightly softened.

2Add beef; stir and cook for 2 minutes or until no longer pink.

3Pour off the fat.

4Add seasoning mix and black pepper to saucepan.

5Stir.

6Cook over moderate heat for 1 minute.

7Mix in tomatoes and kidney beans.

8Bring to a simmer, stirring often.

9Add green beans and red pepper flakes.

10Cover and simmer 5 minutes.

11Cook rice according to package directions. Serve chili over rice and enjoy!
