  • 3/4 c. plain flour
  • 1 Tbsp. sugar
  • 1 1/4 c. self-rising corn meal
  • 1 1/4 tsp. baking powder
  • 3/4 tsp. salt
  • 1 egg
  • 1 c. buttermilk
  • 2 to 3 Tbsp. oil
  • 3 Tbsp. water

    Beat separately the egg, buttermilk, oil and water.

    Combine all ingredients and bake at 375° for 15 minutes, then bake 5 minutes more at 400°.
