  • 6 eggs
  • 1 1/2 c. vegetables, shredded or thinly sliced (onions, zucchini, broccoli, asparagus)
  • 1 1/2 c. olive oil
  • parsley to taste
  • salt and pepper to taste
  • Parmesan to taste

Directions

    Beat eggs.

    Add salt, pepper, Parmesan and vegetables.

    Pour batter into a round 9-inch oiled pan or 9 x 9-inch square pan. Bake in preheated oven at 375° for 45 minutes.

    Serve warm or cold with parsley.
