- 1 1/2 c. vegetables, shredded or thinly sliced (onions, zucchini, broccoli, asparagus)
- 1 1/2 c. olive oil
- parsley to taste
- salt and pepper to taste
- Parmesan to taste
Directions

1Beat eggs.

2Add salt, pepper, Parmesan and vegetables.

3Pour batter into a round 9-inch oiled pan or 9 x 9-inch square pan. Bake in preheated oven at 375° for 45 minutes.

4Serve warm or cold with parsley.
