Ingredients

  • 3 whole celery, chopped
  • 4 sweet onions, chopped
  • 6 pounds chicken livers
  • 2 pounds sirloin steak, chopped and well browned
  • 3 pound loaf sliced Turano bread,
  • 1 bunch parsley, chopped well
  • 1 pound grated parmesan
  • 1 can diced tomatoes, with chilis preferred
  • 2 pounds chestnuts, roasted and peeled
  • 4 cups chicken or turkey stock

Directions

    Saute celery and onions. Set aside.

    Saute steak. Set aside.

    Chop iver and saute. Add diced tomatoes and combine. Add to food processor and process to desired consistency.

    Tear up Turano bread. Add broth or stock to moisten. Add remaining ingredients that were set aside.

    Add parmesan cheese. Add more stock to moisten to desired consistency.

    Grease baking dish or dishes. Fill with stuffing. Top with more cheese and the sliced almonds.

    Bake at 350 until golden brown.
