Noodle Spinach Ring

  • 1/4 lb. broad noodles
  • 2 pkg. chopped, defrosted and drained spinach
  • 1/4 c. margarine
  • 1 onion, chopped
  • 3 eggs, slightly beaten
  • 1 c. sour cream
  • salt to taste

    Cook

    until barely tender; drain.

    Mix noodles and spinach.

    Saute

    onions in butter until tender.

    Mix eggs and sour

    cream and fold in all other ingredients.

    Pour into greased 6-cup mold.

    Place mold in pan of hot water in a 350° oven and cook 45 minutes.

    Unmold onto heated platter.

    Good served with mushrooms or carrots in center of mold.
