  • 3 1/2 c. shelled pecans
  • 1 c. sugar
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1/2 c. butter (not margarine)
  • 2 egg whites

Directions

    Preheat oven to 325°.

    Toast pecans in oven for 8 minutes to warm them.

    Beat egg whites until soft peaks form.

    Add salt. Continue beating until slightly stiffened.
  5. 5
    Add sugar gradually until stiff peaks form.

    Add vanilla and beat until well blended. Fold warmed pecans into meringue mixture.
