Norwegian Rye Bread

Ingredients
- 5 c. water
- 1/2 c. molasses
- 2 Tbsp. shortening
- 2/3 c. brown sugar
- 2/3 c. white sugar
- 1 Tbsp. salt
- 2 c. rye flour
- 1 envelope plus 1 tsp. yeast
- 11 to 12 c. white flour
Directions

1Measure water, molasses, shortening, sugars and salt into a big bowl.

2Heat until shortening is melted and mixture is warm. Stir in yeast and rye flour; beat.

3Stir in as much white flour as possible and then with your hands work in rest.

4Knead until smooth (I don't use quite as much flour).

5Let rise until double in bulk.

6Bake at 350° for 50 minutes.

7Makes 5 loaves.
