Ingredients

  • 2 c. flour
  • 1/2 c. sugar
  • 1 c. milk
  • 1/2 c. chopped pecans
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 egg, beaten

Directions

    Stir dry ingredients together.

    Mix milk and egg and add to dry mixture.

    Mix thoroughly, but do not beat.

    Add nuts.

    Bake in greased loaf pan at 350° for about 1 hour or until straw comes out clean.

    Beat if kept for a day or two, then slice as thin as possible and serve with butter or cream cheese.

    Can be made 3 or 4 days in advance.

    Also freezes well.

    Makes 1 small loaf.

    May use batter to make muffins.
