Ingredients

  • 1/2 lb. cashews, finely chopped
  • 1/2 lb. walnuts, finely chopped
  • 1 c. cooked brown rice
  • 1 c. mild Cheddar
  • 2 egg whites
  • 1/2 c. onion, chopped
  • 1/4 tsp. salt
  • 1 Tbsp. chili powder

Directions

    Mix all ingredients and form into patties.

    Either saute in 1 tablespoon canola oil or bake on greased cookie sheet at 325° for 20 minutes, turning halfway through cooking time.

    Makes 4 to 6 patties.
