- 2 large eggs
- 1 cup sugar
- 2 ounces candied lemon peel
- 9 ounces ground almonds
- 1 -2 tablespoon cornstarch
- 14 teaspoon grated nutmeg (best to use whole nuts and grind with the fine side of a cheese grater to a powder)
- graham cracker
- lemon frosting
- 2 -3 ounces chopped pistachios
Directions

1Preheat oven to 350F.

2Beat the eggs and sugar until frothy.

3Chop the lemon peel.

4Stir the peel and almonds into the egg mixture.

5Add some cornstarch to thicken.

6Fold the nutmeg into the egg mixture.

7Shape the dough into walnut-sized balls and place each ball on a graham cracker.

8Bake cookies for 12-15 minutes.

9After they have cooled, spread frosting on them and sprinkle with pistachios.
