Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, thinly sliced
- 1 medium green pepper, thinly sliced
- 12 cup shredded carrot
- 14 cup almonds or 14 cup cashews (I use cashews)
- 1 34 cups diced cooked turkey
- 2 tablespoons cornstarch
- 12 teaspoon ground ginger
- 2 tablespoons soya sauce
- 1 cup turkey broth (I use chicken broth if no turkey broth on hand)
Directions

1Place sauce ingredients in jar with tight fitting lid.

2Shake to combine.

3Heat oil in wok or frypan on high heat.

4Add onions& stir fry 1 minute.

5Add green pepper, carrots and nuts and stir fry for 2 minutes.

6Stir in turkey and sauce and stir fry until sauce is thick and clear and turkey is warmed through (about 4-5 minutes).

7Serve over rice.
