Ingredients

  • 1/3 c. butter
  • 1/2 tsp. vanilla extract
  • 1 c. whole wheat flour
  • 2 Tbsp. wheat germ
  • 1 Tbsp. buttermilk
  • 1/3 c. maple syrup
  • 1/4 tsp. finely grated lemon rind
  • 2 c. chopped walnuts
  • 1/2 tsp. baking soda

Directions

    Place butter and maple syrup in small saucepan over low heat. Just when butter melts, remove from heat.

    Stir in vanilla and lemon rind.

    In a medium bowl, combine flour, wheat germ and walnuts.

    Place buttermilk in cup and add maple syrup.

    Stir until dissolved.

    Add all ingredients together; stir until combined. Drop batter by the teaspoon onto lightly oiled baking sheets.

    Bake in preheated 325° oven for 12 to 15 minutes or until light golden brown.

    Cool on a wire rack.
