Ingredients
- 3 -4 lbs corned beef brisket
- 1 -2 onion (use your favorite( you're eating it!)
- 1 head cabbage (if you hate cabbage, skip this step. Someone in your family may like it, though. You never know, and)
- 1 lb baby carrots
- 2 lbs potatoes (use your favorite( you're eating it!)
- 1 cup brown mustard (yellow does very well, too.)
- 1 cup brown sugar (you won't use all of it, most likely)
- 12 teaspoon ground cloves
- aluminum foil

1Firstly, make sure you have a pan that's big enough for the whole shabang.

2Very important!

3When buying the corned beef, ALWAYS buy the flat cut.

4The point cut is almost all fat.

5This is no good, unless that's what you want.

6If so, never mind this step!

7:) The flat cuts do better on the last step, though.

8Empty contents of corned beef into pan.

9Squeeze out the red goop into the water too.

10It makes a big deal!

11Add onion and the spice packet, or bay leaf, peppercorns, allspice, cloves and mustard seed, in with the juices.

12Fill the pan with water until the meat is covered by an inch or two.

13Maybe more, if you think it needs it.

14Bring to a boil.

15Once boiling, reduce heat to a simmer.

16Otherwise, it will boil over.

17That is one big smelly mess -- Trust me.

18Make sure the water doesn't get too low, and that it's not in danger of boiling over.

19Boil for about an hour per pound.

20Yes, it's a long and slow process, but so worth it.

21Hang in there.

22On the bright side, you have plenty of time to prep your potatoes, set the table, and make my tasty Light and Fluffy Yeast Rolls!

23The last hour, add the potatoes and carrots.

24Quarter the cabbage, and add in the last 20-30 minutes, depending on how soggy you like it.

25Make sure the cabbage is on the very top, and avoid stirring so the chunks don't separate in the water.

26When the meat is done, it will still look pink.

27Cover cookie sheet with foil, and place the meat on it, FAT SIDE UP.

28Coat meat with the mustard, then press brown sugar into it.

29You will have very gooey hands.

30Wipe hands, then sprinkle ground cloves on top.

31Turn on the broiler, and place meat underneath.

32Broil for just a few minutes.

33You will know when it is done-- it's a beautiful, glazy beast of a meal.

34Place veggies in a platter.

35Serve the corned beef, sliced against the grain, right next to them.

36You won't believe your tastebuds.
