Ingredients

  • 2 1/4 c. oat bran
  • 1/2 c. Sweet 'N Low brown sugar
  • 3 packets Sweet 'N Low
  • 1 Tbsp. baking powder
  • 4 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. walnut pieces
  • 4 Tbsp. raisins
  • 1/2 c. skim milk
  • 2 (8 oz.) cans crushed pineapple
  • 2 egg whites
  • 2 Tbsp. oil

Directions

    Mix dry ingredients in large bowl.

    Mix milk, 1 can pineapple with juice, egg whites and oil.

    Combine both mixtures.

    Drain second can of pineapple and add to mixture.

    Fill muffin cups. Bake at 425° for 20 to 25 minutes.

    Makes 12 to 15 muffins.
