- 1 cup lukewarm water, plus 6 tablespoons
- 2 tablespoons orange juice
- 4 tablespoons canola oil
- 3 tablespoons honey
- 1 cup old fashioned oats
- 1 cup whole wheat flour
- 1 12 cups unbleached all-purpose flour
- 1 14 teaspoons salt
- 3 tablespoons potato flour
- 14 cup oat bran
- 14 cup nonfat dry milk powder
- 2 14 teaspoons instant yeast
Directions

1Combine all of the dough ingredients, mix and knead them by hand until you have a soft and smooth dough.

2Cover and allow the dough to rise until it's quite puffy, though probably not double in size.

3from 1 to 2 hours.

4Gently deflate the dough, and transfer it to a lightly greased work surface.

5Divide it into 16 pieces.

6Shape each piece into a rough ball.

7Place the rolls in a baking pan covered with partchment paper.

8Space the rolls so that they won't touch each other.

9Cover the pan with lightly greased plastic wrap and allow the rolls to rise for another 1 to 1 1/4 hours.

10They won't double in size.

11Uncover and bake the rolls at 350 degres F until they're golden brown on top but still ligth colored on the sides, about 25 minutes.

12Remove them from the oven, and after 3-4 minutes transfer them to a wire rack to cool.
