Oatmeal Blueberry Pancakes

  • 1 cup Fresh Or Frozen Blueberries
  • 1 whole Egg, Beaten
  • 2/3 cups Milk
  • 1/4 cups Butter, Melted
  • 1-1/2 cup Oatmeal, Quick Oats Work Well In This Recipe
  • 1/4 cups Cane Sugar
  • 2 teaspoons Baking Powder

Directions

    Thaw and drain frozen berries.

    Combine egg, milk, and melted butter.

    Mix together oats, cane sugar and baking powder. Gradually add to egg mixture. Mix in blueberries.

    Use 1/4 cup measuring cup to drop batter on hot, greased skillet. When underside is golden brown, quickly flip and brown the other side.

    This makes 8 pancakes.
