Ingredients
- 1 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1 c. butter or margarine, softened
- 1 c. packed brown sugar
- 2 eggs
- 1/2 tsp. almond extract
- 3 c. Quaker oats (quick or old fashioned, uncooked)
- 1 (4 oz.) pkg. flaked or shredded coconut
Directions

1In medium bowl, combine flour and baking soda.

2In large bowl, cream butter and sugar until light and fluffy.

3Blend in eggs and almond extract.

4Add flour mixture; mix well.

5Stir in oats and coconut.

6Drop dough by rounded teaspoonfuls onto greased cookie sheets.

7Bake in preheated 350° oven 10 minutes or until light golden brown. Let cookies cool 1 minute before removing them from cookie sheets to wire racks.

8Makes 4 1/2 dozen cookies.
