  • 1 1/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 c. butter or margarine, softened
  • 1 c. packed brown sugar
  • 2 eggs
  • 1/2 tsp. almond extract
  • 3 c. Quaker oats (quick or old fashioned, uncooked)
  • 1 (4 oz.) pkg. flaked or shredded coconut

Directions

    In medium bowl, combine flour and baking soda.

    In large bowl, cream butter and sugar until light and fluffy.

    Blend in eggs and almond extract.

    Add flour mixture; mix well.

    Stir in oats and coconut.

    Drop dough by rounded teaspoonfuls onto greased cookie sheets.

    Bake in preheated 350° oven 10 minutes or until light golden brown. Let cookies cool 1 minute before removing them from cookie sheets to wire racks.

    Makes 4 1/2 dozen cookies.
