Octopus Casserole

Ingredients

  • 1 lb. octopus
  • 1/2 lb. Cassari cheese (Greek)
  • 1/4 lb. Feta cheese (Greek)
  • 8 to 10 Greek Kalomaria olives
  • 1 onion, diced
  • 1 lemon, cut into very small pieces with rind
  • 2 tomatoes, cut up
  • oregano to taste
  • olive oil
  • salt and pepper to taste

Directions

    Boil octopus slowly 1 1/2 to 2 hours until tender when pierced. Rinse off black covering.

    Cut up octopus into bite size pieces. Cut up both cheeses into bite size pieces.

    Toss all ingredients together and place in casserole dish.

    Season to taste.

    Pour small amount of oil over all.

    Bake at 350° for 30 minutes or until cheese is melted.
