- 1/2 red onion, sliced
- 1 cup grape tomatoes, halved
- 1 pinch salt
- 1 tablespoon olive oil
- 1 cup lemon juice
- For the Avo Smash
- 1 avocado
- 1 tablespoon lemon juice
- 1 pinch salt
- To serve
- 2 pieces toasted sourdough bread
Directions

1To make the pickle mix, combine all ingredients in a bowl and allow to pickle overnight or a minimum 2 hours.

2For the avoidance smash, combine ingredients in a food processor or blender and blitz until smooth.

3To assemble, spread avocado on toasted sourdough and top with pickle.
