- 6 c. sugar
- 2 c. cream
- 1/4 tsp. soda
- 1/2 lb. butter
- 1 tsp. vanilla
- 1 to 2 lb. pecans
Directions

1Pour 2 cups sugar into heavy aluminum or iron skillet and place over low heat.

2Begin stirring with a wooden spoon.

3Keep sugar moving so that it does not burn.

4It will take approximately 1/2 hour to melt sugar completely.

5At no time let it smoke or cook so fast that the sugar turns dark.

6It should be the color of light brown sugar syrup.

7As soon as you have the sugar starting to heat in the skillet, pour remaining 4 cups sugar and cream into a deep heavy kettle set over low heat, while stirring constantly.

8The real secret to mixing these ingredients is to pour a very thin stream from the skillet.

9Continue cooking and stirring until mixture forms a firm ball (245°) when dropped into cold water.
