  • 6 (16 oz.) cans black-eyed peas, drained
  • 1 1/2 c. diced onions
  • 1 1/2 c. diced jalapeno peppers, seeds removed
  • 4 oz. jar diced pimientos, drained
  • minced garlic to taste
  • 2 c. Italian salad dressing
  • salt and hot pepper sauce to taste

Directions

    Adjust all ingredients to suit taste.

    Mix all ingredients and marinate at least 3 days or more to fully develop flavor.

    When ready to serve, drain and serve with big corn chips.

    Makes 2 quarts.
