- 1 kg okra
- 2 -3 tablespoons thick plain yogurt
- 2 tablespoons chickpea flour (BESAN)
- 1 tablespoon red chili pepper
- 1 tablespoon garam masala
- salt
- oil (for frying)
Directions

1Wash and dry the okra.

2Cut of the stem.

3Shred the okra Length-wise (4 Shreds per okra Minimum).

4Dry the shredded okra.

5Add all the other ingredients except oil and mix thoroughly.

6Note that the individual shreds should get coated by the mixture.

7Ensure that the coating is thick and is not running at all.

8Heat oil in a wok.
-
9Fry okra in hot oil in small batches.
-
10Fry till brown.
-
11Remove excess oil by draining on paper towel.
-
12DO NOT COVER AT ALL.

13Serve along with rest of the dishes in a flat salad or rice serving tray.
