- 1/2 pound fresh okra, washed, with 1/4-inch stem attached
- 1 recipe vinaigrette (see recipe)
- 1 tablespoon loosely packed fresh basil leaves (preferably the tiny bush basil leaves, but if they aren't available, then the smallest leaves, finely shredded)
Directions

1Bring two quarts of heavily salted water to the boil.

2Blanch the okra for exactly five minutes.

3Drain and refresh under cold running water for five minutes.

4Drain.

5Toss okra, vinaigrette and basil.

6Allow to marinate for 30 minutes before serving.

7This salad may be made up to four hours ahead of time.
