Okra With Basil

Ingredients

  • 1/2 pound fresh okra, washed, with 1/4-inch stem attached
  • 1 recipe vinaigrette (see recipe)
  • 1 tablespoon loosely packed fresh basil leaves (preferably the tiny bush basil leaves, but if they aren't available, then the smallest leaves, finely shredded)

Directions

    Bring two quarts of heavily salted water to the boil.

    Blanch the okra for exactly five minutes.

    Drain and refresh under cold running water for five minutes.

    Drain.

    Toss okra, vinaigrette and basil.

    Allow to marinate for 30 minutes before serving.

    This salad may be made up to four hours ahead of time.
