Old-Fashioned Apple Pie

  • pastry for 9-inch two-crust pie
  • 1/2 c. sugar
  • 1/4 c. packed brown sugar
  • 1/4 c. all-purpose flour
  • 2 tsp. fresh lemon juice
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • dash of salt
  • 6 to 7 c. thinly sliced, pared tart apples (about 6 medium)
  • 2 Tbsp. butter or margarine

    Heat oven to 425°.

    Prepare pastry.

    Mix sugars, flour, lemon juice, cinnamon, nutmeg and salt.

    Stir in apples.

    Turn into pastry-lined pie plate.

    Dot with butter.

    Moisten rim of bottom crust and place top crust, with slits cut in it, over filling. Fold edge of top crust under bottom crust, pressing to seal.

    Make a decorative edge.

    Cover edge with 3-inch strip of aluminum foil to prevent excessive browning; remove foil during last 15 minutes of baking.

    Bake until lightly brown and juice bubbles, 40 to 50 minutes.
