  • 2 c. cornmeal
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 2 eggs, beaten
  • 2 c. buttermilk
  • 1/4 c. bacon drippings
  • 3 tsp. baking powder

Directions

    Combine cornmeal, soda, baking powder and salt; stir in eggs and buttermilk.

    Heat bacon drippings in an 8-inch cast-iron skillet until very hot.

    Add drippings to batter and mix well. Pour batter into hot skillet and bake at 450° for about 25 minutes.
