- pastry for 9-inch pie (one crust pie)
- 3 large eggs or 6 egg yolks (I always use 6 egg yolks)
- 1/2 c. granulated sugar
- 1/2 tsp. salt
- 1/4 tsp. nutmeg (if desired)
- 1 tsp. vanilla
- 2 2/3 c. milk
Directions

1Beat eggs or egg yolks slightly with rotary beater.

2Beat in remaining ingredients.

3Pour into pastry lined pie pan.

4Bake for about 40 minutes, or until silver knife inserted into side of filling comes out clean (center is soft but will set later).

5Bake in a hot oven for the first 15 minutes; finish in a 350° oven for remaining time.
