- 1 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1 c. water
- grated rind of 1 lemon
- juice of 2 lemons
- 3 egg yolks
- 3 egg whites
- 6 Tbsp. sugar
Directions

1Combine sugar and cornstarch thoroughly in heavy boiler.

2Add water, grated rind and lemon juice to mixture.

3Cook over low heat until the mixture begins to thicken.

4Beat egg yolks slightly.

5Add hot mixture, a little at a time, to the beaten egg yolks.

6Return mixture to boiler and continue to cook over low heat until mixture thickens to consistency desired.

7Pour cool mixture into a 9-inch pastry shell.

8Top with meringue.

9Brown meringue in oven preheated at 350°.
